The Real Pad Thai — Not What You Think

If you've only had Pad Thai from takeaway restaurants, you're in for a revelation. Authentic Pad Thai, the way it's made in Thailand, is a complex balance of sweet, sour, salty, and umami flavors that takes practice to perfect.

At our cooking school in Chiang Mai, Pad Thai is one of the most requested dishes. Here's how we teach it — step by step.

Ingredients (Serves 2)

For the Noodles

  • 200g thin rice noodles (เส้นจันท์)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 150g chicken, shrimp, or tofu (your choice)
  • 2 eggs
  • 100g bean sprouts
  • 3 stalks Chinese chives, cut into 2-inch pieces
  • 2 tablespoons crushed roasted peanuts
  • For the Pad Thai Sauce

  • 3 tablespoons tamarind paste (concentrate)
  • 2 tablespoons fish sauce (or soy sauce for vegetarian)
  • 2 tablespoons palm sugar (or brown sugar)
  • 1 tablespoon oyster sauce
  • 1 teaspoon chili flakes (optional)
  • Garnish

  • Lime wedges
  • Extra bean sprouts
  • Crushed peanuts
  • Dried chili flakes
  • Banana blossom (optional)
  • The Secret: Tamarind Sauce

    The heart of authentic Pad Thai is the tamarind sauce. Many Western versions use ketchup — this is completely wrong. Real Pad Thai gets its signature tangy sweetness from tamarind paste balanced with palm sugar and fish sauce.

    Making the sauce:

  • Mix tamarind paste, fish sauce, and palm sugar in a small bowl
  • Stir until the sugar dissolves completely
  • Taste and adjust — it should be equally sweet, sour, and salty
  • Set aside
  • Step-by-Step Instructions

    Step 1: Prepare the Noodles

    Soak rice noodles in room temperature water for 30 minutes until pliable but not soft. Important: Do not use hot water — this makes noodles mushy. Drain and set aside.

    Step 2: Heat Your Wok

    This is crucial. Your wok must be smoking hot before you start. In Thailand, we cook Pad Thai over very high heat — this creates the smoky flavor called "wok hei" (breath of the wok).

    Step 3: Cook the Protein

    Add oil to the hot wok. Cook your chicken, shrimp, or tofu until just done. Push to the side.

    Step 4: Cook the Eggs

    Crack 2 eggs into the wok. Let them set slightly, then scramble loosely. Don't overcook.

    Step 5: Add Noodles & Sauce

    Add the drained noodles to the wok. Pour the tamarind sauce over the noodles. Toss everything together using chopsticks or tongs. Cook for 2-3 minutes until noodles absorb the sauce.

    Step 6: Add Vegetables

    Toss in bean sprouts and Chinese chives. Stir-fry for just 30 seconds — they should stay crunchy.

    Step 7: Garnish & Serve

    Transfer to a plate. Sprinkle with crushed peanuts. Serve with lime wedges, extra bean sprouts, and chili flakes on the side.

    Common Mistakes to Avoid

  • **Using ketchup instead of tamarind** — This is the biggest mistake
  • **Soaking noodles in hot water** — They become mushy and stick together
  • **Overcrowding the wok** — Cook in small batches for best results
  • **Not getting the wok hot enough** — You need high heat for authentic flavor
  • **Adding too many ingredients** — Simple is better in Thai cooking
  • **Skipping the garnish** — Lime juice is essential to the finished dish
